Lemony Chicken Popover Puff


Last week I went to a garage sale and found a new PC cookbook for a dollar and this week I thought I would make a few of these recipes. Tonight I made the Lemony Chicken Popover Puff and it was delicious. There were NO leftovers (darn...I love to have leftovers for Robert's lunch box). Since the cookbook has been retired, I felt it was safe to post the recipe...so it is on my other blog, the HatchaMeal.

I had a small deep dish baker and halved the recipe and it worked just fine. But this is the full recipe. In case you don't know, the deep dish baker is a stone that often doubles for a cake pan or deep dish pizza pan...it has many uses in the PC recipes. But if you don't have one, try to find a comparable size dish...it should be 11" in diameter and hold 8 cups in volume.

I avoided using all the PC terminology of their wonderful devices...and if I don't have something I just improvise. Robert heartily recommends this dish, too. It was so much fun watching the popover really pop up and almost over and then deflate...
