death over...NOW TO FOOD! and some pictures

Don't we always eat after deaths? Robert and I went to PA last weekend to be with Jocelyn and Steve and their family. We took a vanload full of 'stuff' down to them, and Niko went along also. It was a lovely weekend. Saturday, Jocelyn prepared the following 2 recipes for lunch. It was so refreshing and tasty that I thought I'd offer up the recipes here.

Jocelyn's Tomato Phyllo Pie

1/4 cup butter, melted
2 garlic cloves, crushed ice
8 sheets phyllo or 1 can large crescent rolls
1 cup shredded mozzarella cheese, or extra if desired
3 med red and oragne tomatoes, slices
1/3 cup chopped fresh basil

1 Lightly grease a large baking sheet. Preheat oven to 375° ( I used a stone)
2 Combine butter and garlic. Place 1 phuyllo sheet on pan. Brush with butter mixture. Repeat with remaining phyllo sheets and butter mixture (i used the crescent rolls but will try Phyllo next)
3 Sprinkle phyllo with mozzarella to within 2.5" of the edges, top with sliced tomatoes. Sprinkle with basil (actually the recipe calls for 4 oz, feta cheese to be added with the basil...but I chose not to)
4 Roll phuyllo edges to rom rim. Bake 20 to 25 minutes until phyllo is crisp and cheese is melted (the same time and time works for the crescent rolls)

Dawn's Brocolli Salad

1 big head of broccoli, chopped
1 medium red onion, sliced very thinly
1 bag toasted, roasted, salted sunflower seeds
1 bag craisins
1 cup mayonnaise, not Miracle Whip
1/3 cup sugar
2 Tbs white vinegar

Mix the mayo, sugar and vinegar. Combine salad ingredients. Toss with salad dressing right before serving.

Niko has become a very good car traveler. Here he is sleeping between the 2 front seats. Being a sight dog, he always needs to SEE out. So if it's dark, he's either under a blanket or we have the dome light on.

Steve had brought home 3 of the loveliest roses a few days before we arrived and they opened so perfectly. Just picture perfect, in fact.

Saturday night, Jocelyn decided we needed a fire.

Steve and Guy built us a fire in the hearth. Then we had marshmallows. But it was still very cool out.

And Miss Scarlett needed to get in on the activity...but I think she got confused...the wood stick was NOT the marshmallow

Here is a short video of Niko chasing Steve and kids around their house. Steve was chasing Guy while he held Scarlett...not sure Steve likes Niko but he tolerated the pup. Niko just likes to run after whatever is running...and in this case, it was Steve and the kids.

thanks for sharing some fun family times...love the recipes and they sound tasty. Though I would have to substitute splenda for sugar. Still thinking about my new eating habits but have lost 1.5 pounds so far. So their are benefits to diabetes...

I've been wanting the recipe for broccoli salad -- thanks for sharing and thank Dawn.

Jocelyn's wall looks a lot like the old family room. She likes COLOR, too, eh?
